Owners and friends, Doug and Ryan were diagnosed with Celiac disease and gluten intolerance at different points in life. To fill the void of gluten free craft beer, the pair quickly became infatuated with creating great tasting beer from naturally gluten free ingredients such as millet and quinoa. The brewery name is an ode to the Aurochs, a giant bull that used to be hunted for its horns, which were often used to drink beer from. The Aurochs went extinct, due in part to the expansion of wheat and barley farming. Since Aurochs doesn’t use any wheat or barley in their dedicated gluten free brewery, they resurrected the Aurochs as their logo.
